2018 Albarino & Quick Cured Salmon Steaks with Tzatziki

INGREDIENTS

  • 1/4 Cup light brown sugar

  • 1 TBSP kosher salt

  • 1 TBSP smoked paprika

  • 4 salmon steaks

  • 1 cup greek yogurt plain

  • 1/2 cup minced english cucumber

  • 2 TBSP lemon juice

  • 2 TBSP chopped dill

  • 1 garlic clove pita bread and tomatoes on the vine

Instructions:

1. Whisk brown sugar, salt, and paprika to large shallow dish. Add salmon and turn to coat. turn and cover and place in the fridge for 1 hour
2. Stir together yogurt, cucumber, lemon juice, dill, garlic. Season with salt to taste
3. Light grill to 350 degrees.
4. Place salmon on olive oiled grates fro about 4 minutes per side along with tomatoes
5. Serve with tzatziki, pita bread and tomatoes
